Tonight I got a bug in my tummy for some salad. The store had heads of iceburg (yum!) for a buck, so I thought it would be good to make a dressing to go on top of a hunk of it. I came up with this beast of a dressing.
Creamy Curry Dressing
1/3 c Vegan mayo
2-3 TB lemon juice
1/2 tsp curry powder
salt and pepper
Mix all the ingredients together. It should be a little runny, not thick like a spread. I know I tend to have different ideas about what things taste like than the average bear, so taste it for salt/pepper and adjust. This is a nice lemony dressing with a little curry kick.
